As the warmer days roll in, our chefs have created a fresh new menu that perfectly captures the flavours of spring and summer. We’ve picked out four standout dishes that are sure to tempt your taste buds — from light and vibrant salads to indulgent desserts, there’s something for everyone.
A Special Note from Liam
Creating my first menu is a real milestone. I enjoyed the creative freedom to craft dishes that reflect current trends while showcasing the best of the season. I’m especially proud of the market fish—it brings back memories from my very first assessment here at Nirvana during my commis chef course six years ago.

Market fish
An elegant dish that’s as beautiful as it is delicious. The fish is pan-fried to perfection, with a rich, succulent flavour that pairs wonderfully with the buttery, lemony crushed potato. The highlight is the cabbage, red pepper, and pancetta sauce — rich and full of flavour, with a subtle acidity from the tomato and pepper that perfectly balances the dish. A refined yet satisfying choice.

Warm Mediterranean vegetable salad
This one was a pleasant surprise! The chickpeas are dressed in a creamy, lightly spiced sauce that hints at North African flavours with a smoky harissa undertone. Fresh spinach, bright bursts of pomegranate, and a touch of zingy coriander give the dish a vibrant and refreshing twist — a wholesome and tasty option for a spa lunch.

Chinese chicken burger
A fun twist on a classic! The soft brioche bun is filled with a crunchy Asian slaw and a juicy hoisin and honey-glazed chicken fillet. Served with a colourful, crisp side salad, the dish delivers those irresistible summer BBQ vibes — sweet, savoury, and wonderfully satisfying.

White chocolate mousse
If you have a sweet tooth, this dessert is pure heaven. The mousse is light and fluffy, like a cloud, with a sweet and creamy flavour. Topped with shiny pink poached rhubarb, the slight tartness of the fruit cuts through the sweetness beautifully. It’s smooth, rich, and utterly moreish — the perfect ending to your meal.
